You can make flour out of oatmeal, chic peas, lentils and even popcorn!
No, you can't make bread out of all of them because they don't have the same elements as wheat flour. BUT you can bread things for frying like yummy Indian foods and add things to make bread if you need gluten free items.
I haven't tried using an alternative flour yet, but definitely want to give it a go. I think it's SO COOL!
And I have been using my Kitchenaid at least once a week lately. I love it!
